The new low carb pasta? Cellulose
The trend of carbohydrate-based products without carbohydrates or low in carbohydrates , is also spreading here, although to a much lesser extent than abroad, where the offer of low-carb products includes spaghetti with legumes, rice or pasta made of pseudocereals such as quinoa, and recipes to make at home such as raw zucchini noodles or spaghetti squash, which are obtained from a particular type of pumpkin, very stringy. In Italy, those who want to try low carb products will have very similar alternatives available, which are based on a mixture of fibers, partly soluble (konjac or glucomannan, inulin) and partly insoluble.
So you can buy flours with inulin, with a low glycemic index, such as Fiberpasta; konjac pasta like the famous shirataki, or like Lazero pasta. Other similar products are for example those of Ciaocarb. If you can’t find them in organic shops, you can only buy them online. All promise low calories, low carbohydrates, the ability to be cooked and seasoned with gravies and sauces. Ideal for those on a diet or even for diabetics, these low carb products are also allowed in some famous diets: in Dukan, for example, sharataki were a permitted food. Among the products with insoluble fibers, there are the new low carb cellulose spaghetti.
A cellulose pulp is in fact the new low carb product that will probably invade the Italian market, and that was invented in Japan: some time ago I saw a video presentation of cellulose chips, with zero calories. Even cellulose pasta has very few calories, about twenty per 400 grams of spaghetti, so five per hundred grams.
At the moment they are not on the market yet, but I imagine the cost will be considerable. They are made by a textile company (a disturbing detail), Omikenshi , and they are made from a blend of konjac and cellulose or konnyaku and cellulose.
The calories of cellulose are not assimilated by the human body, but the description of the product already suggests its contraindications: these low carb products, in fact, due to the mixture of fibers contained, increase water retention, and can create intestinal problems, for example. increase constipation. For this reason, I always advise you to try these foods a little at a time, but not to introduce them into your diet every day.
