Especially since Cozzolino has an ancient pizza recipe on his side, simple, with flour, yeast, water and salt, no type of added fat, with a reduced gluten content thanks to the slow leavening (36 hours). This can be achieved by making a pizza with natural yeast and long leavening even at home (or asking for it in a pizzeria) and which acts as a distinction between a healthy pizza dough, with a lower carbohydrate and gluten content and highly digestible and a pizza dough. which remains on our stomach, leavened for a few hours and which is typical of certain continuous jet pizzerias.
