Fake cauliflower pizza, the original recipe!

The original recipe to prepare a dish that has become the fashion of the moment, and that has depopulated abroad, thanks to the mania of the low-carbohydrate or low-carb diet: I’m talking about the fake cauliflower pizza , a pizza without gluten and yeast-free , which is obtained from a cauliflower dough and which allows us to eat pizza more often, without any fault. I would say that, rather than seeing it as an alternative to pizza, the fake cauliflower pizza is an alternative to the usual dish of seasoned vegetables, and is therefore to be understood not as a sgarro, but as a healthy and dietary meal in all respects .

FAKE CAULIFLOWER PIZZA, THE RECIPE!
2 to 4 servings

a kilo of cauliflower;
a large beaten egg;
100 grams of goat or ricotta cheese / dairy product;
Origan; salt

Cut the cauliflower into pieces and pass it through a food processor, so that it has the grainy consistency of rice; put it to boil for 5 minutes, then drain it very well. Pour the chopped cauliflower onto a clean cloth, close the cloth and squeeze it well, so that the excess liquid comes out well. This operation is the most important! Once you are convinced that you have removed all the excess water, pour the mixture into a bowl, add salt, possibly add spices or herbs to taste, then add the egg, oregano, goat cheese. Mix very well!
At this point, pour the mixture onto a baking sheet with parchment paper greased with a tablespoon of oil. The thickness should be about one and a half / two cm, so don’t crush it too much. Bake in the oven at 200 degrees. Remove from the oven, pour over spoonfuls of tomato sauce, mozzarella, more oregano, a tablespoon of oil, salt and pepper. Return to the oven for ten minutes. The pizza is ready!
