A diet that will not push you to consider calories to lose weight, but the molecules of food, or the interactions between foods and the effect that these foods have on our health from a chemical point of view.

This is what the famous doctor Pier Luigi Rossi says , who has written various books on the molecular diet (the first is called ” From calories to molecules “, published by Aboca).
Doctor Rossi, a doctor and specialist in food science of Tuscan origins, explains in the molecular diet that diets based on simple calorie counting have no scientific basis.
What exactly does it mean?
It means that the human system is much more complex than the calorie system and therefore counting calories is not enough to lose weight.

MOLECULAR DIET: WHAT IS IT ABOUT?

The molecular diet, on the other hand, is based on the idea that the molecules of the food we ingest communicate with our cells and our DNA. Dr. Rossi is based on recent discoveries in the field of nutrigenomics , a nutritional discipline that relates to genetics by identifying risk factors and prevention factors.
If we choose foods with the right molecules we could lose weight and never get it back.

In reality, just by studying the menus of the molecular diet, we realize that, even without talking about calories, the diet proposed by Dr. Rossi is always set on a low-calorie and balanced approach.

He doesn’t talk about calories but about interactions between food and DNA, but the result doesn’t change: to lose weight you have to eat fewer high-calorie foods.

It is sacrosanct that the quality and choice of food matter: it makes no sense to say that a thousand calories of cheeseburgers are equivalent to a thousand calories of lentil soup with vegetables and spelled. In the second case we will in fact also have more water, more fiber, more vitamins and minerals and a better balance between macronutrients.
So, in terms of health, even if it is always a thousand calories, the effect on my body on a chemical and hormonal level will be different depending on my food choices. In short, the method still hides a dietary regime, even if balanced, judicious, to promote long-term weight loss.

In particular these are the principles of the molecular diet.

  1. Optimal nutrition is vegan based.

    Doctor Rossi does not mean to exclude all foods of animal origin, but to prefer fish as an animal food, and at least some dairy products, but essentially fatty cheeses and meats are very limited in favor of legumes and fish.

  2. Dishes are always the result of a combination.

    Carbohydrates are always associated with a food of protein origin so as not to have a too heavy impact on blood sugar. Before each meal it is suggested to eat raw or cooked vegetables.

  3. Avoid cereal flours to prefer grains .

    Carbohydrates as we have seen are present in the molecular diet, but Rossi suggests preferring grains and not flour products. So a dish of brown rice or barley is better than a plate of pasta. Likewise, bread and other baked goods are greatly reduced.

  4. No to saturated fats.

    Rossi continues to support the importance of a diet reduced in saturated fat. Yes, on the other hand, to oilseeds (the classic dried fruit) and olive oil.

  5. Yes to intestinal fasting.

    Every now and then it is good to have a day of intestinal rest, in which you follow a protocol of semi-fasting both from complex carbohydrates and from fats and proteins. Basically you take fruit and vegetables in the form of salads, soups, centrifuged, for a day.
