4 SWEET RECIPES WITHOUT WASTE

Chocolate and hazelnut mousse.

Ingredients for 4 servings
Soaking water from a jar or jar of boiled chickpeas of about 400 grams (aquafaba)
120 grams of hazelnut chocolate
1-2 tablespoons of skimmed or vegetable milk
2 tablespoons of chopped hazelnuts including the outer skin (25 grams)
a tablespoon of unsweetened cocoa or chocolate chips (10 grams)

Method.
In a bowl, whisk the chickpea soaking water with electric whisk until snow is firm like that of the egg whites. Separately, melt the chopped chocolate in a bain-marie and add 2 tablespoons of skimmed or vegetable milk. Allow the mixture to cool and add it to the whipped chickpea water. Divide the chopped hazelnuts and unsweetened cocoa or chocolate chips into 4 bowls: half below and half above. In the middle put the mousse. Place the bowls in the fridge for three hours or overnight covered with plastic wrap. Calories per serving: 217.5.

To be enjoyed at breakfast with a coffee with sweetener and 125 grams of low-fat or soy yogurt + a tablespoon of red fruits for a total of 300 calories.
