low-carb pizza , almost without carbohydrates , with 345 calories per serving and four and a half grams of total carbohydrates of which only one and a half grams of simple sugars: here is the recipe, which I have just tested, for a low carb pizza margherita and dietary, gluten-free, yeast-free, very digestible and naturally rich in fiber thanks to the mix of coconut and almond flour. Obviously, it is useless to tell you this but in general there is always someone who makes this criticism: this recipe has nothing to do with real pizza, it is not a pizza except in an improper sense. It’s a pizza-like, okay? Ok.
Perfect for those on a low carb diet, ketogenic diet or simply want to get rid of excess sugar for a few days. Obviously it has a near-zero glycemic index!

LOW CARB MARGHERITA PIZZA
For 4 people (one large pizza or 4 small pizzas of about 18 cm in diameter)
– 44 grams of organic coconut flour (Fior di Loto brand)
– 4 eggs
– 26 grams of grated Parmesan or pecorino cheese
– 20 grams of flaxseed powder (ground flax seeds) or almond flour
– oregano and a pinch of garlic powder (garlic optional)
– two level tablespoons of fresh tomato sauce (one level teaspoon for pizza)
– salt, pepper
– 80 gr of mozzarella passed in a mixer
– one and a half tablespoons of level olive oil (15 gr)
– a pinch of cream of tartar (a quarter of a teaspoon)

The process is very simple. In a mixer we put the cream of tartar, the coconut flour and the flax seeds, the oil, the eggs, the salt, the parmesan and the garlic powder. Let the mixture work for a few minutes, then pour it into a large pan or into small round pizza pans, dividing it into 4 parts. The mixture is nice dense, and should be modeled with your hands on the pan directly.
At that point, season with a little tomato sauce, oregano, and a drop of extra oil. Put in the oven at 175 ° for about 20 minutes, until the surface appears dark and crunchy, then add the chopped mozzarella, put a few more minutes in the oven, and finally the low-carb margherita pizza is ready!
