Gnocchi with clams and zucchini.
Sauté 400 grams of diced zucchini in a pan with half a clove of garlic, a pinch of turmeric, a pinch of pepper, a tablespoon of oil. Cook for about 15 minutes, add 250 grams of shelled clams, blend with a little wine and finish cooking with the lid on for 5 minutes. Add plenty of parsley and season 500 grams of potato gnocchi. Kcal 300 per serving.
As an alternative to gnocchi, you can use 240 grams of basmati rice.
Pasta alla norma light.
Cut 200 grams of eggplant into chunks and brown them in two teaspoons of oil and half a chopped onion for 5-6 minutes. Add 500 grams of chopped tomato pulp, lower the heat, add some chopped basil leaves, cover with a lid and cook for another 20 minutes. In a separate bowl, mix 80 grams of ricotta with a teaspoon of grated pecorino. Cook 250 grams of rigatoni al dente, toss in the sauce for two minutes, transfer them hot to a bowl and cold add the ricotta cream + a sprinkling of pepper. Kcal per serving: 300.
Bucatini with country meat sauce.
In a blender, chop half a carrot with half an onion and half a stalk of celery + a small piece of garlic. Add 150 grams of lean ground turkey and run the mixer for 20 seconds. Transfer the mixture to a pan with a level teaspoon of oil and blend with a little red wine, add salt and pepper. After 5 minutes, add 500 ml of tomato puree + half a glass of water. Cook for half an hour over low heat adding a little pepper. In a saucepan, cook 240 grams of bucatini, drain very al dente, pour them into the turkey sauce with a tablespoon of chopped pecorino and sauté them in a pan for a couple of minutes. Kcal: 300.
