Coconut and chia yogurt parfait
This recipe is one of the many you can make using chia seeds, oil seeds rich in omega3 and soluble fiber which, mixing with yogurt and oats but also with vitamins and mineral salts of fruit, give us a dessert or an amazing and very healthy breakfast, rich in fiber. It is a thicker and fuller-bodied chia pudding thanks to Greek yogurt.
You can also eat this chia seed yogurt parfait as a meal replacement.

YOUGRT PARFAIT WITH CHIA AND COCONUT SEEDS
170 grams Greek yogurt type Fage fat free
stevia a spoonful
vanilla aroma two drops
200 ml of coconut drink such as Alpro or coconut water
50 grams of fruit to taste such as blueberries, strawberries, watermelon, melon, pineapple, kiwi, fruit forest
or half a banana sprinkled with lemon juice
30 g chia seeds
a teaspoon of oat bran
2 teaspoons dehydrated coconut flour
Take a jar like the ones that are also sold in small shops for one euro: a tall and narrow smoothie glass with a capacity of about 500 ml will also do. In a separate bowl, mix the yogurt very well with the stevia, the vanilla flavor and the coconut drink.
Put the chia seeds, the bran, the dehydrated coconut flour and the stevia in the bottom of the glass. Pour the liquid mixture into the glass with the seeds and bran and mix again very well and quickly in order to mix all the ingredients.
Cover with chopped or pureed fruit, possibly customize the recipe with some sliced almonds or another sprinkling of coconut. Cover the glass and keep it in the fridge for at least 4 hours. If you want to eat it for breakfast, do it the night before at least, otherwise consider a whole morning.
The total calories are 365 , and this allows you to enjoy the parfait for breakfast or instead of lunch or dinner.
It is rich in mineral salts, has a good protein intake and has omega3, as well as lots of fiber.
